Curried Coconut Lime Chicken and Rice

A recent survey of 1,000 Americans found that chicken is still king for most when it comes to protein consumption. But, sometimes chicken tends to be too dry or it gets mundane to eat and eat and eat. Here’s a recipe that’s full of flavor to spice up your next chicken dish and keep that chicken nice and juicy!

Ingredients

  • 2 lbs chicken breast 
  • 2 cups cooked jasmine rice or sub rice for Quinoa for added protein 
  • 1 can coconut milk 
  • 2 Tbs toasted sesame oil 
  • 2 Tbs curry powder 
  • Red pepper flakes 
  • 1 large bok choy, sliced into strips
  • 3 cloves garlic, minced 
  • 3 limes, juice, and zest needed 
  • 1 bunch cilantro, rough chopped 
  • 1 cup cherry tomatoes 
  • Red sweet banana peppers, garnish 
  • Salt, to taste 

Directions

  1. Cook rice according to package. 
  2. While rice is cooking, heat skillet to medium-high heat and coat the bottom of the pan with oil. Gently rest chicken breast into pan. Don’t overcrowd the pan. Cook the chicken until browned and cooked completely through. Set aside once cooked.
  3. In the same pan, add a small amount more of oil and add the bok choy. Sauté for 3-5 min and then add the garlic and continue to sauté for another 2 minutes.
  4. Next, add the cooked rice right to the pan. Make a well in the center of the rice and add the tomatoes to give them direct heat. Sauté for 3 minutes and incorporate.
  5. Add the coconut milk, lime zest, curry powder, dash of red pepper flakes, and salt. Incorporate once again and simmer for 5 minutes.
  6. While simmering slightly, nestle the chopped-up chicken breast right into the pan. Turn the heat off and add the lime juice. Adjust with salt to your liking!
  7. Enjoy!
